Cool Beans Salad
This recipe is a winner because you can serve it hot or cold. You know Cutie likes variety and this dish is fresh, pretty and nutritional. So I give it 5 stars and one of the dishes I plan on using in my Healthy Meal Prep Business. I would normally tell you to kiss the cook, but only before you make this dish.
It's kinda spicy.
Before we get started with the recipe, let me just say a word or two about FLAVOR. When I learned to cook like a professional through my Gourmet Cooking Course (see my certificate on the About tab), I had to learn about balance. The ratio of one flavor to another and how much I wanted to use in the dish. Of course all cooks know you have to taste as you go. Add more and hold back on certain spices. Bottom line... you can ruin a dish by over doing it with the spices. Now...life is the same. We want to jump in and get things done but patience is a habit you'll want to develop. You need to take some time and see what things are all about before making major or minor decisions.

Don't jump on everything in at once.

2 ears of fresh corn
1/2 red bell pepper
1 can of kidney beans - drained
1 can of Ro-Tel Spicy Tomatoes - Medium
In a large bowl, shave the corn off of the ear. Next, saute diced onion and red pepper in a wee bit of EVOO, until lightly done. They should be glassy but still firm. Add the cooked onion and red pepper in the bowl with the shaved corn. Strain the Kidney Beans and the Ro-Tel Tomatoes. You should rinse the kidney beans a few times and shake off the excess water. Add the drained beans and tomatoes in with the onions, peppers and corn. Sprinkle in Chili spice, Cayenne and Garlic Salt.
Mix well and chill.

People eat with their eyes and forget about the nutritional value. Well we covered it all with this dish and you can heat it or take to a picnic or potluck and serve it cold. There are not a lot of ingredients but the Cool Beans Salad really brings the WOW. We got it all here, hunnie. It looks good. It taste good and it's good for you.
