Panera Bread Pecan Roll
One of my fondest childhood memories is our visit to the bakery. I never could resist pressing my finger on the glass case and using the big brown eyes to see if I could get more than one treat. For certain the Pecan Rolls were part of our order and I always got to cut the white string off of the bakery box.
Panera Bread makes this mega Pecan Roll with a buttery brown sugar glaze. An extremely generous topping of fresh whole pecans on the outside and it's moist and flaky inside. I'm inclined to share a lot of things, except this Pecan Roll. A hot cup of coffee and a Pecan Roll to go please. More than enough to make you smile. Thanks Panera.
The Watergate Salad
It’s that time of year again. Parties, dinners, and potlucks. The food sign up sheet hits my desk at work and 5 people are already bringing chips, dips, pop and plates. My face usually twisted at this point and I’m tapping a pen on my desk. I’m thinking I’d really like to bring a fancy dish and something different this time, but what? Next time there’s no doubt, I’ll be bringing the Watergate Salad. It’s a party pleaser for even the most persnickety palate.
The Watergate Salad is a cool, crisp and colorful fruit salad and it has just 5, count um, 5 ingredients. Better yet, you can actually serve this dessert in the same bowl you make it in. The Watergate Salad is a fruity, fluffy palate pleaser with refreshing pineapples and crunchy diced pecans. I had my first sampling of the Watergate Salad this year at an office potluck. A shameful confession; I had 3 servings of the “green stuff” before I finally asked who made it. I think I set the alarms off when I made my third trip to the buffet table to get another heaping spoonful.
Diva’s learn early how to multitask. We’ve figured out a way to look good, cook good and entertain. After you select your party outfit, go ahead and turn on your happy music and rock out, while you stir it up.
1 pkg. (4 serving size) JELL-O Pistachio Flavor Instant Pudding & Pie Filling
1 (20 ounce) can crushed pineapple in juice
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup chopped PLANTERS Pecans
1 1/2 cups thawed COOL WHIP Whipped Topping
Combine dry pudding mix, pineapple with juice, marshmallows and pecans in a large bowl until well blended. Add whipped topping; stir gently until well blended. Cover. Refrigerate 1 hour or until ready to serve.
This recipe is quick, easy and visually enticing. Take your presentation up a notch and serve it in Martini glasses, with a simple maraschino cherry garnish.

I created this recipe out of necessity. I was having guest for dinner and funds were low but I needed a dessert. I stretched a small box of Chocolate pudding with a few dollops of Cool Whip, poured the mixture in some wine glasses and hoped with some small chance that everybody really likes chocolate. When you hear spoons clanging and scrapping, you know you have a hit. Over time, I fine tuned the recipe by adding extracts and nuts. The Chocolate Almond Mousse became my go to dinner date recipe after this bachelorette discovered that men like whipped cream on anything.
3.9 OZ BOX OF INSTANT CHOCOLATE PUDDING
2 CUPS OF COLD EVAPORATED MILK
8 OZ CONTAINER OF COOL WHIP
1 CAN OF WHIPPED TOPPING
1 TEASPOON OF ALMOND EXTRACT
1.55 OZ HERSHEY MILK CHOCOLATE BAR
1/2 HALF CUP SLICED ALMONDS
I USED GINGER EVANS INSTANT PUDDING MIX WHICH IS SOLD AT SAV A LOT. IN FACT ALL MY INGREDIENTS WERE PURCHASED AT SAV A LOT.
MAKE THE INSTANT CHOCOLATE PUDDING AS INSTRUCTED. CUT A CHOCOLATE BAR INTO SMALL PIECES AND SET ASIDE. IN A LARGE BOWL ADD THE PUDDING AND THE ENTIRE CONTAINER OF COOL WHIP AND ALMOND EXTRACT. BLEND UNTIL LIGHT AND SMOOTH. POUR THE MOUSSE INTO FOUR DESSERT CUPS OR SMALL WINE GLASSES AND CHILL UNTIL IT'S TIME TO SERVE. GARNISH EACH DESSERT CUP WITH WHIPPED TOPPING, CHOCOLATE CHUNKS AND SLICED ALMONDS.
