In Part One of my series, Salad My Way, I showed you how to clean and store Lettuce. Part 2 of my series is going to mess you up. If you’re use to tearing lettuce with your hands or cutting it with a knife, I want you to stop. From now on, you’re going to cut those cleaned lettuce leaves with Kitchen Scissors. Yes, Peeps! There’s even a variety of specialty Lettuce slash Salad Scissors on the market, but I’ll show you how to get it done with plain ole Kitchen Scissors and why it better and faster.
#1 - I had to learn this the hard way. Cutting lettuce with a knife will quickly brown the edges. Then you get a yucky colored salad from all that oxidation.
#2 - Tearing the lettuce actually is not so bad but it has a rough look. Not good for a Chef trying to make a pretty salad.
