Mr. Picky likes beef so he buys the cuts he wants which tend to be rather pricy. He recently prepared a package of beef short ribs, his way and I admit they were outstanding but it was not frugal a meal. His choice. I had to take my happy hips into the kitchen and figure out how to make a frugal meal that would stretch with other package in the freezer. Of course I went into recipe development mode when he wasn’t around and I came up with a hot and hearty soup. I’m being very quiet. Tip toeing in my own kitchen because I’m really nervous. Let’s see if Mr. Picky likes what I made with his precious beef short ribs.
Hearty Beef Short Ribs and Onions Soup
I know Mr. Picky won’t turn his nose up to anything that has onions and garlic. So I’m off to a good start. First time experimenting with Beef Ribs and who knew they would be off the chain?
In The Kitchen
I start loosing momentum by Thursday and a one pot meal is my solution for getting it done. Besides, we are enduring freezing temps and a hearty soup warms cold bones. I have never cooked Beef Ribs in my life, so this smart home cook did exactly what Mr. Picky did. I seasoned the ribs and tossed them in the crock pot on low. The low heat with a little water tenderizes the ribs and the meat falls off the bone. Stir occasionally to make it look like you’re really cooking.
You know a whiff of onions and garlic simmering will make you peek under the lid too. Here’s where the frugal part comes in. Use what you have in the fridge for soup fillers and be fearless with the spices.
Beef ribs have a fat back and a little marbeling. The bone on the short beef rib is large so you can fish it out of the pot with a slotted spoon. Beef short ribs render a lot of flavor and some fat which is perfect for a hearty soup.

So rich in flavor and hit’s the spot. Frugal Home Cooks, you can also add cornstarch and potato chunks for a stew. I think Mr. Picky will enjoy a piping hot bowl after work in front of the TV.
