The Watergate Salad
It’s that time of year again. Parties, dinners, and potlucks. The food sign up sheet hits my desk at work and 5 people are already bringing chips, dips, pop and plates. My face usually twisted at this point and I’m tapping a pen on my desk. I’m thinking I’d really like to bring a fancy dish and something different this time, but what? Next time there’s no doubt, I’ll be bringing the Watergate Salad. It’s a party pleaser for even the most persnickety palate.
The Watergate Salad is a cool, crisp and colorful fruit salad and it has just 5, count um, 5 ingredients. Better yet, you can actually serve this dessert in the same bowl you make it in. The Watergate Salad is a fruity, fluffy palate pleaser with refreshing pineapples and crunchy diced pecans. I had my first sampling of the Watergate Salad this year at an office potluck. A shameful confession; I had 3 servings of the “green stuff” before I finally asked who made it. I think I set the alarms off when I made my third trip to the buffet table to get another heaping spoonful.
Diva’s learn early how to multitask. We’ve figured out a way to look good, cook good and entertain. After you select your party outfit, go ahead and turn on your happy music and rock out, while you stir it up.
1 pkg. (4 serving size) JELL-O Pistachio Flavor Instant Pudding & Pie Filling
1 (20 ounce) can crushed pineapple in juice
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup chopped PLANTERS Pecans
1 1/2 cups thawed COOL WHIP Whipped Topping
Combine dry pudding mix, pineapple with juice, marshmallows and pecans in a large bowl until well blended. Add whipped topping; stir gently until well blended. Cover. Refrigerate 1 hour or until ready to serve.
This recipe is quick, easy and visually enticing. Take your presentation up a notch and serve it in Martini glasses, with a simple maraschino cherry garnish.
