It’s a simple and fast comfort food dish made with just 3 ingredients. By the time you get warmed up, dinner is done.
Stuffed Chicken Breast Rollups

I created this recipe just after I completed college (many years ago) to satisfy my own craving for chicken and stuffing. Everything does not need to be made completely from scratch. Don’t judge me. I’ve never been one to spend hours in the kitchen, so it worked well for me and the Stuffed Chicken Breast Rollups have been enjoyed by many of my guest and family. The same recipe can be used with Turkey Breast too.
Multitasking to the max
Rock that microwave and oven but do try to make a little noise while you’re stirring. It adds a little ambiance. Need I remind you of my mantra? Look Good, Cook Good and Entertain in Style. All casserole dishes to the rescue. Use the glass microwaveable casserole dishes with the plastic lids. They’re designed for freezing and they look good on the table. A saving grace. Pun intended which you’ll get in a minute.
1-No need for a pot or pan. Steam the veggie sides in a microwave oven using a glass casserole dish and take them straight to the table. Al Dente please. No soggy veggies. Crisp is in. Try a smaller cut veggie to shorten the cooking time. When you steam in the microwave instead of the stove, your curls won’t drop. I’m all about presentation and this is how you manage to “look good and cook good.”
2-Don’t forget the bread basket with warm dinner rolls. When you turn the oven off, put in your bakery rolls. There’s just enough heat left to do a light toast on the rolls. Watch them though because nobody wants a dry roll. Break out the cloth napkin or towel for your serving basket and cozy the rolls. It keeps the rolls warm and they just look more appealing. (Get the buttery flavored dinner rolls from the bakery department. My preference. You can cut down a few calories by eliminating additional butter at the table.)
I gave you a little free time while your dinner is making itself. The microwave is turning and the oven is doing its thing. Go set the table! It makes meal time special and folks appreciate it. It’s also a good time to be bossy and impressive when you call everyone in to eat. No complaining either! The clean up is just as fast as the meal creation. Glass casseroles can go right in the dishwasher with the other dirty dinner dishes.
Creamy Chicken Sauce
In another bowl, empty the remaining Cream of Chicken soup and add ¾ cup of water. Whisk the water and Cream of Chicken soup thoroughly. Pour the sauce mixture in the bottom of the casserole dish with the rollups. (Optional Seasoning) Lightly sprinkle rollup tops with a little smoked paprika and course ground pepper. Cover the casserole dish tightly with foil. Bake for 30 minutes.
Remove the foil from the dish. Drizzle a little of the creamy chicken sauce from the bottom of the casserole dish over the rollups and return the uncovered dish to the oven. Continue baking for another 5 minutes or until rollups are lightly browned. To keep the rollups moist and tender, do not exceed my recommended baking time. Remove rollups with a steel spatula and serve with sides. Wha La!
